For instance, I've neer been to an actual swap meet, but I'd be interested in knowing how they work like what kind of items are popularly traded, or how the echanges are initiated.

I assume you're asking about Swap Meet at FanimeCon and not how to start your own little swap meet.
My comments here are based on my past experiences. Plans for this year might be different and somethings things change at the last minute. Thursday night's Swap Meet is for people who pre-registered and is usually low key as buyers and sellers finish registration and wander upstairs to the Swap Meet. Friday night's Swap Meet usually has a lot more people and may have people lining up early to get in. See http://www.nnanime.com/events/0805fanime/index.html for some pictures of the crowded exhibit hall from last year -- it's a little hard to tell, but the solid mass of buyers offset from the wall are completely hiding the sellers and their goods.
People who want to sell should study the official info carefully. For people who just want to buy, you basically just have to have a FanimeCon badge and show up. It's helpful for buyers to bring cash in small bills and a empty bag to carry stuff. It's OK to ask sellers if they are willing to negotiate on price.
While bartering (swapping) is allowed, paying cash is usual. The variety of anime, manga, cosplay, Japanese games/toys/music and related things for sale varies from good to amazing. There's usually a good selection of both people selling used popular things cheaply and people selling rare collector's items.
